For the Coffee Mixture

  • 24 pieces Lady Fingers Dip briefly in the coffee mixture to avoid sogginess.
  • 2 tablespoons Cocoa Powder Opt for high-quality cocoa for best results.

Instructions

Preparation

  • In a medium mixing bowl, beat the mascarpone cheese until soft and creamy.
  • Add the heavy whipping cream, sugar, and vanilla extract to the mascarpone. Beat until stiff peaks form.
  • In a shallow dish, mix together the strongly brewed coffee and optional dark rum.
  • Quickly dip the lady fingers into the coffee mixture for a brief moment and arrange them in a single layer in an 8x8 baking dish.
  • Spread half of the mascarpone mixture over the layer of lady fingers.
  • Add another layer of dipped lady fingers on top, followed by the remaining mascarpone mixture.
  • Dust the top with cocoa powder, cover with plastic wrap, and refrigerate for at least 3 hours.

Notes
