Ingredients

For the Cookie Dough

  • 1 cup Pumpkin Puree 100% pure, not pie filling
  • ¾ cup Granulated Sugar can reduce to ⅔ cup for less sweetness
  • ½ cup Brown Sugar
  • ½ cup Unsalted Butter softened
  • 1 large Egg Yolk or substitute with 1 tablespoon applesauce for vegan option
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Ground Nutmeg
  • ¼ teaspoon Ground Cloves

For the Cream Cheese Frosting

  • 8 ounces Cream Cheese softened
  • 2 cups Powdered Sugar
  • a pinch Salt

Instructions

Cookie Preparation

  • Preheat your oven to 350°F (175°C).
  • Cream together softened butter, granulated sugar, and brown sugar in a mixing bowl until light and fluffy, about 2-3 minutes.
  • Add egg yolk and vanilla extract, mixing until well combined.
  • Stir in pumpkin puree until fully incorporated.
  • Whisk together flour, baking powder, salt, cinnamon, nutmeg, and cloves in a separate bowl. Gradually combine with wet ingredients until a soft dough forms.
  • Drop spoonfuls of dough onto a lined baking sheet, leaving space in between.
  • Bake for 10-12 minutes or until edges are set and centers remain soft.
  • Cool cookies on baking sheet for a few minutes before transferring to wire racks.

Frosting Preparation

  • Prepare the frosting by beating cream cheese, butter, powdered sugar, and vanilla together until smooth and fluffy.
  • Frost cooled cookies generously with cream cheese frosting.

Notes
