For the Curd

  • 2 cups Fresh Cranberries Use ripe, fresh cranberries for the best tart flavor.
  • 1 cup Sugar Adjust amount for a more tart curd, or substitute with honey.
  • 4 large Egg Yolks Free-range yolks will provide richness.

  • In a medium pot, stir together fresh cranberries, water, and sugar. Heat until it reaches a rolling boil, then lower the heat and let simmer for 10 minutes.
  • After 10 minutes, allow the mixture to cool for 5 minutes, then blend until smooth.
  • Return the smooth mixture to the pot and whisk in egg yolks. Cook over medium heat, whisking continuously for 5-7 minutes until thickened.
  • Remove from heat and transfer the curd into a clean container. Allow it to cool completely before refrigerating.

Notes

Store the cranberry curd in an airtight container in the fridge for up to 2 weeks.
