Ingredients

Chocolate Coating

  • 8 oz Dark Chocolate at least 70% cocoa
  • 1 tablespoon Coconut Oil optional

Pomegranates

  • 1 cup Pomegranate Seeds completely dry

Optional Toppings

  • 1 pinch Sea Salt optional
  • ¼ cup Chopped Nuts optional, e.g. almonds or pistachios

Instructions

Making the Drops

  • Line a rimmed baking sheet with a silicone mat or parchment paper.
  • Spread out the pomegranate seeds on a clean towel and let them dry for 1-2 hours.
  • Melt the dark chocolate in a double boiler or microwave until silky smooth.
  • Gently toss the dried pomegranate seeds in the melted chocolate until coated.
  • Scoop tablespoon-sized amounts onto the prepared baking sheet.
  • Chill in the refrigerator for about 1 hour or until chocolate is set.
  • Store in an airtight container in the fridge for up to 3 days.

Notes

For extra flavor, sprinkle with sea salt before chilling. Keep pomegranate seeds completely dry to avoid chocolate seizing.
