Ingredients

For the Crust and Topping

  • 2 cups Quick-Cooking Oats or use rolled oats for a heartier finish
  • 1 cup All-Purpose Flour or substitute with gluten-free flour
  • 1 cup Brown Sugar (packed) dark brown sugar enhances flavor
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon for warm, aromatic flavor
  • ½ cup Butter (melted) unsalted is preferred

For the Cheesecake Layer

  • 8 oz Cream Cheese (room temperature) can use low-fat cream cheese
  • ½ cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 2 large Eggs (room temperature)

For the Apple Filling

  • 4 cups Granny Smith Apples (peeled and sliced) can blend with other apple varieties

For Serving

  • ½ cup Caramel Topping drizzle for extra sweetness

  • Preheat your oven to 350°F.
  • In a large bowl, mix together quick-cooking oats, all-purpose flour, brown sugar, baking powder, baking soda, and ground cinnamon. Stir in melted butter until crumbly, saving 1¼ cups for topping.
  • Press the remaining mixture into the bottom of a greased 9-inch baking pan and bake for about 15 minutes.
  • In another bowl, beat cream cheese until smooth. Gradually add granulated sugar and vanilla, then mix in eggs one at a time.
  • Toss sliced Granny Smith apples with flour, brown sugar, and cinnamon in a separate bowl.
  • Layer the apple mixture evenly on the baked crust, then pour the cheesecake filling on top. Sprinkle the reserved oat topping over it.
  • Bake for about 35-45 minutes or until set. Let cool completely before refrigerating.

Notes

Serve with a scoop of vanilla ice cream for added delight.
