Ingredients

For the Crust

  • 1 cup Unsalted Butter Feel free to substitute with margarine if needed.
  • 2 cups All-Purpose Flour Use gluten-free flour if desired.
  • 0.5 teaspoon Kosher Salt Regular salt can work in a pinch.

For the Cheesecake Layer

  • 1 package (8 oz) Cream Cheese Ensure it's at room temperature for easy mixing.
  • 0.75 cup Granulated Sugar Brown sugar gives a richer flavor if preferred.
  • 1 large Egg A flax egg can be a great vegan substitute.
  • 1 teaspoon Vanilla Extract Imitation vanilla can be used as an alternative.

For the Streusel Topping

  • 0.5 cup Confectioners’ Sugar
  • 0.5 cup Chopped Pecans Walnuts are a suitable alternative or you can omit for nut allergies.
  • 2 cups Apple Butter Pureed apples or another fruit spread can be used as a substitute.

Instructions

How to Make Apple Butter Cheesecake Streusel Bars

  • Preheat the oven to 350°F (175°C).
  • In an electric mixer, beat together the unsalted butter, 2 cups of all-purpose flour, and kosher salt until it resembles coarse crumbs. Press into a 13x9 inch baking dish and bake for 15 minutes until golden brown. Let it cool completely.
  • In a mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy. Add the egg and vanilla extract, mixing until combined.
  • In a medium bowl, combine the remaining flour, confectioners’ sugar, softened butter, chopped pecans, and a pinch of kosher salt. Mix until crumbly.
  • Spread the cheesecake mixture over the cooled crust, followed by a layer of apple butter. Sprinkle the streusel topping over the apple butter.
  • Bake for 40 minutes, or until filling is set and top is slightly golden. Let cool completely at room temperature, then refrigerate overnight. Cut into squares before serving.

Notes

Serve warm with a scoop of vanilla ice cream for an indulgent treat. These bars keep well for up to 7 days in the fridge.
