Ingredients

For the Jam

  • 4 cups Cranberries Fresh or frozen, do not thaw
  • 2 cups Strawberries Fresh or frozen, crushed lightly
  • 4 cups Sugar Adjust to taste
  • 1 cup Liquid Pectin Follow specific instructions on your brand
  • 1 teaspoon Cinnamon Fresh spices recommended
  • 1 teaspoon Ginger Fresh spices recommended
  • ½ teaspoon Allspice Fresh spices recommended
  • ¼ teaspoon Cloves Fresh spices recommended

Instructions

Making the Jam

  • Puree cranberries and strawberries in a food processor until they appear slightly chunky.
  • Combine the pureed fruit with sugar and spices in a large saucepan and mix well.
  • Heat the mixture over medium-high heat until it reaches a full rolling boil, stirring continuously.
  • Boil for 1 minute, then remove from heat and stir in the liquid pectin.
  • Return the mixture to heat and boil for another minute while stirring constantly.
  • Skim off any foam from the top of the jam mixture and ladle it into sterile jars.
  • Process the jars in a boiling water bath for 10 minutes, then cool undisturbed for 12 hours.

Notes

Ideal for spreading on warm scones or buttered toast, this jam makes a great gift.
