Instructions

Prepare the Pie

  • In a mixing bowl, combine all-purpose flour, sugar, baking powder, and salt. Cut in cold butter with a pastry cutter until the mixture resembles coarse crumbs. Gradually add ice water until the dough comes together.
  • Wrap the formed dough in plastic wrap and refrigerate for at least 30 minutes.
  • In a separate bowl, mix chopped strawberries with sugar and cornstarch. Allow this mixture to sit for about 10 minutes.
  • On a lightly floured surface, roll out half of the dough to fit your baking sheet. Place the rolled dough on the sheet, add the strawberry filling, then roll and place the second half of the dough on top. Seal the edges with a fork.
  • Brush the top crust with egg wash. Bake in a preheated oven at 375°F for 25-30 minutes or until the crust is golden brown.
  • Whisk together powdered sugar, vanilla extract, and a splash of water until smooth. Once the pie has cooled, drizzle this glaze over the top and finish with colorful rainbow sprinkles.
