  • 1 cup Red Bell Pepper Chopped, can substitute with green bell pepper.
  • 1 cup Sharp Cheddar Cheese (shredded) Can use mild cheddar for a softer taste.
  • 1 cup Pepper Jack Cheese (shredded) Can swap with mozzarella for a milder option.
  • 1 teaspoon Salt Adjust according to taste.
  • 1 teaspoon Pepper Adjust according to taste.

Garnish

  • 2 tablespoons Fresh Parsley Optional for garnish.

  • In a large bowl, whisk together the eggs, chopped red bell pepper, shredded cheeses, salt, and pepper until well combined.
  • In a skillet over medium heat, add the breakfast sausage, breaking it apart as it browns. Cook until fully browned and crumbled, about 5-7 minutes. Remove from heat.
  • Grease a muffin tin generously, then distribute the cooked sausage evenly into each cup. Pour the egg mixture on top.
  • Preheat your oven to 350°F (175°C). Place the muffin tin in the oven and bake for 20-25 minutes, or until muffins are set.
  • Remove muffins from the oven and allow them to cool in the tin for a few minutes before garnishing with fresh parsley.
