Instructions

Preparation

  • Pour 3 cups of fresh apple cider into a saucepan with optional mulling spices. Simmer over medium heat for about 1 hour until thick.
  • Preheat oven to 350°F. Combine cookie crumbs, melted butter, salt, and powdered sugar. Press into the bottom of a springform or cake pan and bake for 10 minutes. Cool.
  • In a stand mixer, beat softened cream cheese and brown sugar until smooth. Add sour cream, vanilla, salt, cinnamon, and cooled reduced cider. Incorporate eggs one at a time, then add flour.
  • Pour the filling into the cooled crust. Bake in a water bath at 325°F for 80-90 minutes, until edges are firm.
  • Turn off oven, leave cheesecake inside with door cracked for 30 minutes. Cool completely before refrigerating for at least 8 hours.

Notes

Top with caramel or fresh apple slices for presentation. Use room-temperature cream cheese for smooth filling.
