  • In a mixing bowl, beat the softened butter, light brown sugar, and granulated sugar together until fluffy, about 2-3 minutes.
  • Mix in the vanilla extract, pumpkin puree, and egg yolk until fully integrated.
  • Gradually add in the all-purpose flour, baking soda, baking powder, salt, and cinnamon. Stir until just combined.
  • Gently fold in the white chocolate chips until evenly distributed.
  • Scoop the dough into balls, about 2 tablespoons each, and chill in the refrigerator for 30 minutes.
