How to Make Caramel Apple Cider Cookies

  • Prepare Reduced Cider: Simmer 1 cup of apple cider in a saucepan over medium heat until it reduces to ¼ cup, about 10-15 minutes. Let it cool completely.
  • Cream Butter and Sugars: In a mixing bowl, add ½ cup of softened unsalted butter, 1 cup of granulated sugar, and ½ cup of packed brown sugar. Beat until pale and fluffy, about 3-4 minutes.
  • Combine Wet Ingredients: Pour in the cooled apple cider, add 1 large egg, and 1 teaspoon of vanilla extract. Mix thoroughly until well combined.
  • Mix Dry Ingredients: In a separate bowl, whisk together 2 cups of all-purpose flour, ½ teaspoon of baking soda, ½ teaspoon of baking powder, ½ teaspoon of cinnamon, ¼ teaspoon of nutmeg, and ¼ teaspoon of salt.
  • Combine Mixtures: Gradually incorporate the dry mixture into the wet ingredients, stirring until a soft dough forms. Fold in optional ingredients if desired.
  • Chill Dough: Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  • Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Shape and Bake: Scoop the dough into 1-inch balls and place on the prepared sheet. Bake for 10-12 minutes until edges are lightly golden.
  • Cool: Let cookies cool on the baking sheet for 2-3 minutes before transferring to a wire rack.

Notes

For an extra sweet touch, drizzle the cooled cookies with a glaze made from powdered sugar and apple cider.
