How to Make Blackened Chicken Alfredo Lasagna Roll-Ups

  • Preheat your oven to 350°F (175°C) using the instructions on the lasagna noodle package as a guide.
  • Cook the lasagna noodles according to package directions; drain and rinse them in cold water to stop cooking.
  • Season the chicken breasts generously with Cajun seasoning. In a skillet, heat olive oil over medium heat, then sear chicken until golden and cooked through, about 6-8 minutes per side. Allow to rest before slicing.
  • Prepare the filling by combining cream cheese, ricotta cheese, Parmesan cheese, and spinach in a bowl. Mix until smooth and creamy, adding a pinch of salt and black pepper.
  • Assemble the roll-ups by laying a noodle flat, layering with sliced blackened chicken, and topping with cheese filling. Roll tightly and place seam-side down in a greased baking dish.
  • Make the Alfredo sauce by melting butter in a saucepan. Add minced garlic and sauté until fragrant. Whisk in heavy cream, stirring constantly until slightly thickened; season with salt and pepper.
