Ingredients

For the Cookies

  • 2 cups All-Purpose Flour or gluten-free flour
  • 1 cup Pumpkin Puree pure pumpkin, not pie filling
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1 teaspoon Cinnamon adjust to taste
  • ½ teaspoon Nutmeg adjust to taste
  • ¼ teaspoon Ground Cloves adjust to taste
  • 1 teaspoon Vanilla Extract or almond extract
  • 2 large Eggs
  • ½ cup Brown Sugar
  • ½ cup White Sugar
  • ½ cup Vegetable Oil or melted coconut oil

For the Filling

  • 8 oz Cream Cheese softened, can substitute with mascarpone
  • ½ cup Unsalted Butter softened
  • 2 cups Powdered Sugar
  • a pinch Salt to balance sweetness

Instructions

How to Make

  • Preheat your oven to 350°F (175°C) and grease baking sheets or a whoopie pie pan.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, and spices.
  • Add the pumpkin puree, vanilla, both sugars, and oil to the dry ingredients, stirring until combined.
  • Gradually mix in the beaten eggs, being careful not to overmix.
  • Using a ¼ cup measure, drop the batter onto prepared sheets, spacing them apart.
  • Bake for 10 to 13 minutes until edges are golden and a toothpick comes out clean.
  • Cool the cookies on a wire rack completely.
  • Blend cream cheese, butter, and vanilla until smooth, then mix in powdered sugar until fluffy.
  • Spread filling on half the cooled cookies and top with the other halves.
  • Optional: Dust the whoopie pies with powdered sugar before serving.

Notes

Soften both butter and cream cheese at room temperature for best filling consistency. Adjust spices to taste for personal preference.
