  • ½ cup granulated sugar for additional sweetness
  • 1 tablespoon cinnamon adjust to taste
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt enhances flavor
  • 1 cup unsalted butter cold, cut into cubes
  • 1 tablespoon vanilla extract adds depth of flavor
  • 1 large egg binder for structure
  • 1 large egg yolk for moisture

For the Streusel Topping

  • 1 cup all-purpose flour base for the streusel
  • ½ cup brown sugar for sweetness
  • 1 tablespoon cinnamon adjust as desired
  • ¼ teaspoon salt just a pinch
  • ¼ cup unsalted butter cold and cubed

For the Icing

  • 2 tablespoon heavy cream or milk as a substitute
  • 1 cup powdered sugar for sweetness

  • In a medium bowl, mix all-purpose flour, brown sugar, cinnamon, and salt. Blend in softened butter until it resembles coarse crumbs. Refrigerate for about 30 minutes to firm up.
  • Preheat your oven to 400°F (200°C). Line your baking sheets with parchment paper to prevent sticking.
  • In a large bowl, whisk together all-purpose flour, cake flour, cornstarch, cinnamon, baking soda, baking powder, and salt.
  • In a stand mixer, beat cold butter with brown and granulated sugars until creamy and fluffy, about 2-3 minutes.
  • Mix in the egg, egg yolk, and vanilla extract until fully combined.
  • Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  • Scoop and roll the dough into 1-inch balls, placing them on the prepared sheets. Create an indent in the center of each ball and fill with the prepared streusel mixture.
  • Bake in the preheated oven for 8-11 minutes, or until the edges are just golden brown. Allow to cool slightly on the sheet before transferring to a wire rack.
  • In a small bowl, whisk together the heavy cream and powdered sugar until smooth. Drizzle over the cooled cookies.
  • Optional: Sprinkle with extra cinnamon before serving.
