Instructions

Cookie Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Cream the softened unsalted butter with granulated and brown sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, and stir in the vanilla extract.
  • Whisk together all-purpose flour, ground cinnamon, baking soda, and salt in a separate bowl.
  • Gradually combine the dry mixture with the wet ingredients until just combined.
  • Fold in the quick oats evenly throughout the dough.
  • Scoop the dough into balls, about 1 to 1.5 tablespoons each, and place them on the baking sheets.
  • Bake the cookies for 10–13 minutes, or until edges are golden brown.
  • Cool the cookies on the baking sheet for at least 10 minutes before transferring to a wire rack.

Notes
