Instructions

How to Make Low Carb Keto Beef And Broccoli

  • Begin by seasoning the sliced beef chuck roast or flank steak with sea salt, black pepper, and sesame oil for a flavorful foundation.
  • Set your Instant Pot to the sauté setting and sear the beef in batches for about 1-2 minutes until it achieves a beautiful golden brown crust.
  • In a small bowl, whisk together the minced garlic, fresh grated ginger, soy sauce, beef broth, erythritol or monk fruit sweetener, and an extra splash of sesame oil to create a tasty sauce.
  • Pour the sauce over the browned beef slices. Seal the Instant Pot lid and set it to high pressure for 4 minutes, ensuring the valve is locked in the sealed position.
  • While waiting, steam your broccoli florets in a microwave-safe bowl with a splash of water for 2-3 minutes until they are bright green and tender.
  • Once cooking time is up, carefully quick-release the pressure by opening the vent, taking care to avoid steam burns.
  • In a separate small bowl, whisk the xanthan gum or arrowroot starch with cold water. Add this mix to the pot and select the sauté mode to thicken your sauce, stirring well.
  • Gently fold the steamed broccoli into the thickened sauce and beef mixture, warming everything together until it’s heated through.
  • Adjust the seasoning to your liking, and serve hot alongside cauliflower rice or zoodles for a complete low-carb meal.

Notes

Optional: Sprinkle with sesame seeds for an extra crunch and a pop of flavor. Leftovers can be stored in an airtight container for up to three days; simply reheat gently for a delicious meal anytime.
