Ingredients

For the Carrots

  • 1 pound Carrots Cut into 1-inch pieces
  • 2 tablespoons Olive Oil For roasting
  • 1 teaspoon Salt To taste
  • ½ teaspoon Pepper To taste

For the Whipped Ricotta

  • 1 cup Ricotta Cheese Can substitute with cottage cheese
  • 1 tablespoon Lemon Juice Freshly squeezed

For the Hot Honey Drizzle

  • 2 tablespoons Honey Regular honey
  • 1 tablespoon Hot Honey Can make by adding red pepper flakes to honey

For Garnish

  • 1 tablespoon Fresh Herbs Such as parsley or chives

Instructions

Preparation

  • Preheat the oven to 425°F (220°C). Optionally line a baking sheet with parchment paper.
  • Prepare the carrots by rinsing them and peeling. Cut into 1-inch pieces.
  • Toss the carrot pieces in a bowl with olive oil, salt, and pepper until well-coated.
  • Arrange the carrots on the baking sheet in a single layer and roast for 25-30 minutes, flipping halfway.
  • Whip the ricotta cheese in a bowl with lemon juice and a pinch of salt until airy.
  • Cool the roasted carrots slightly before serving.
  • Assemble by spreading the whipped ricotta on a platter, topping with roasted carrots, and drizzling with hot honey.
  • Garnish with fresh herbs before serving.

Notes

For extra color and flavor, add crushed red pepper flakes to the hot honey.
