For the Casserole

  • 1 pound Chicken Breast can substitute with rotisserie or leftover chicken
  • 2 cups Cauliflower Rice drain excess water if using frozen
  • 8 ounces Cream Cheese can substitute with sour cream
  • 1 cup Salsa choose low-carb salsa
  • 2 cups Shredded Cheese (Mexican or Cheddar) can use Mexican blend or Monterey Jack
  • 1 tablespoon Chili Powder
  • 1 teaspoon Cumin

Optional Toppings

  • 1 medium Avocado adds creamy richness
  • ½ cup Sour Cream for tangy goodness
  • ¼ cup Fresh Cilantro for herbaceous freshness

Directions

  • Preheat the oven to 400°F. Spray a baking dish with nonstick cooking spray.
  • Mix the cream cheese and salsa in a microwave-safe bowl, heating until soft for about 1-2 minutes. Stir in the chili powder and cumin.
  • Chop the cooked chicken into bite-sized pieces. In a large mixing bowl, combine the chicken, cauliflower rice, half of the shredded cheese, and the cream cheese mixture.
  • Spoon the mixture into your prepared baking dish and top with the remaining shredded cheese.
  • Bake for 30 minutes, or until the cheese is melted and golden brown.

Notes

Feel free to add low-carb veggies such as spinach or diced bell peppers. Enhance your dish with toppings like avocado, sour cream, or cilantro.
